AL CHILE CHILAQUILES
Ingredients:
12 corn tortillas cut into 1/2” strips
1 cup of Al Chile Salsa
1 1/2 cups of shredded cooked chicken (white or dark meat)
1 slice avocado
1 chopped white or red onion
Chopped cilantro
Creme Mexican or creme fraiche
Instructions:
Fry the tortillas:
In a large sauté pan, coat pan generously with corn oil (1/8 inch), heat on medium high to high. When the oil is hot, add the tortillas, fry until golden brown. Remove tortillas to a paper towel lined plate to soak up excess oil. Sprinkle a little salt on the tortillas. Wipe the pan clean of any browned bits or tortillas.
Heat the salsa:
Add 2 teaspoons of oil to pan, bring to high heat again. Add Al Chile salsa and let cook for several minutes.
Add the fried tortilla to the salsa. Gently turn over the pieces of tortilla until they are well coated with salsa. Let cook for a few minutes more.
Add the shredded chicken. Remove from heat. Serve chilaquiles with onion, cilantro, and avocado. Top it with fried eggs and refried black beans on the side.
